Chinese Spicy Pig’s Ear Salad (Chinese Style Cooking Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

I understand that pig ear may sound like a wired ingredient to many of you. However, it is the favourite ingredient for many Chinese people. Pig ear tastes really great due to the gristle. Usually, it is either boiled directly or stewed and then served as a cold dish.

1 Cooked Pig’s Ear (300g)
1 Green Chilli Pepper
1 Red Chilli Pepper
3 Cloves Garlic
50g Celery
15g Coriander
2 Spring Onions
1 Tsp Green Peppercorns
1 Tsp Sesame Seeds
1 Tbsp Spicy Fermented Soy Bean sauce
1 Tbsp Light Soy Sauce
2 Tbsp Malt Vinegar
1 Tbsp Chilli Oil
1 Tsp Sesame Oil
1 Tsp Sugar
Salt (Optional)

1. Finely chop the garlic
2. Cut the chilli peppers and spring onions into thin threads
3. Thinly slice the celery
4. Roughly chop the coriander
5. Thinly slice the pig’s ear
6. Add 1 Tbsp oil in a wok, add peppercorns and sesame seeds, fry on low heat for 2 minutes, then remove from heat
7. Place the sliced ear in a large bowl
8. Add the ingredients from the wok and mix
9. Add garlic, soy sauce, chilli oil, sesame oil, fermented soya bean, vinegar and sugar, mix well
10. Add celery, chilli peppers, spring onion, coriander and salt to taste, mix well
11. Transfer to a dish and serve
