Coconut Chicken Curry Ingredients:

4 pieces of chicken breasts, cut into strips
1 can coconut milk
1 red bell pepper, cut into strips
1 medium onion, chopped
1 cup mixed vegetables
2 tablespoons curry powder
1 teaspoon ginger powder
1/8 teaspoon red chili flakes
2 tablespoons coconut oil
salt and pepper

How To Make Coconut Chicken Curry:

1. In a skillet, heat 1 tablespoon of coconut oil over medium heat then add the chicken meat. Cook until light brown on both sides then set aside.
2. In a skillet, heat the remaining 1 tablespoon of coconut oil then saute the onions.
3. Add the red bell peppers and red chili flakes. Cook for 5 minutes before adding the coconut milk, curry powder, ginger powder, salt, and pepper. Mix well and simmer for another 5 minutes or until the sauce is reduced.
4. Add the mixed vegetables and the chicken pieces. Mix well and simmer for another 5 minutes.

Serve with steamed white rice.
