Here’s an easy, hearty stew called Pinakbet where traditionally the star of the dish are the vegetables. The traditional version does have a little bit pork but I easily replaced it with tempeh. If you bought my vegan bagoong, feel free to use it in this dish. If you don’t have vegan bagoong, you could easily use soy sauce or tamari. Kain na, let’s eat!

3 tbsp. refined coconut oil (or your favorite cooking oil)
3 cloves of garlic, minced
1 yellow onion, chopped
1 small bowl of kabocha squash
1 cup of water (or more if needed)
1 small of eggplants, sliced
1 small bowl of string beans, cut to 2-inch length
8-10 pcs of okra
1 block of tempeh,
2-3 tbsp of vegan bagoong or
2-3 tbsp of soy sauce
