Veggie Frittata Ingredients:

6 eggs
1 cup mixed vegetables
1 tablespoon butter
1/3 cup medium onion, chopped
1/8 cup water
salt and pepper

How To Make Veggie Frittata:

1. In a skillet, melt the butter over medium heat. Saute the onions then add the mixed vegetables. Cook for 5 minutes or until tender.
2. In a bowl, whisk the eggs and water. Pour the egg mixture over the cooked vegetables. Cover and cook over medium heat for 5 minutes.
3. Allow the uncooked egg mixture to flow at the ends of the pan to dry.
4. When the top of the frittata is firm, remove from heat. Cut into wedges and serve.
