Beef Kare Kare or Beef Stew in Peanut Sauce is a version that makes use of beef chuck. Traditional ingredients are oxtail and tripe. The vegetables used for this dish are blanched snake beans, bok choy, and Chinese eggplant. This is enhanced by a tablespoon of spicy shrimp paste on the side. This paste is known as “bagoong alamang” in Filipino.
